毛蛤就是毛蚶子,俺这边叫毛嘎啦,大多都是拌菠菜吃,今天用它来炒了个韭菜,味道特鲜美。做法也是特简单,毛蛤让老板去壳了,回来清洗干净,热水汆烫一下,看到变色赶紧捞出控水,锅热放油,下葱姜干辣椒爆香,放入毛蛤肉,加料酒蚝油生抽老抽盐调味,翻匀放入韭菜段,大火翻炒均匀,出锅装盘即可。鲜香味美,喜欢可以试一试。
