笔管鱼也叫海兔,肉质鲜美脆嫩,最简单的吃法就是涮火锅,,我们这边通常是炖豆腐,炖出来汤鲜味美。不过今天我们来个更加好吃的做法,就是韭菜炒笔管鱼,味道鲜美极了,做法也特别简单。先把笔管鱼肚剪开,去除内脏软骨,去掉眼睛跟牙齿,搓洗干净。这里实在不会处理,可以让鱼老板处理好,回来洗干净就可以。锅里烧水,水开给笔管鱼焯一下水,烫个几秒钟,笔管鱼微微打卷捞出沥水。韭菜洗净切段,切点姜丝去腥。锅热放油,炝香姜丝,下入笔管鱼翻炒两下,关小火,加料酒蚝油生抽调味,开大火翻匀,下入韭菜段翻匀,最后加盐再次翻炒均匀即可。
